Ingredients:
- 4 oz. Alba or Brown Clamshell mushrooms
- 2 Tbsp. canola or other neutral oil
- ¼ tsp. minced ginger
- ½ tsp. minced garlic
- 2 tsp. soy sauce
- 1 tsp. mirin
- 1 pinch ground black pepper
- 1 pinch crushed red chili pepper (optional)
Directions:
- Separate mushrooms from the bunch by hand.
- Heat a large sauté pan (or wok) to medium-high heat.
- Add oil and allow to heat for a moment.
- Add mushrooms and toss to coat with oil, then stir every 30-60 seconds until mushrooms begin to brown (about 4-6 minutes).
- Add ginger and garlic then cook for 1-2 minutes until fragrant.
- Add ground black pepper, crushed red chili pepper (if using), soy sauce, and mirin and stir to combine; cook for another minute or so until liquid has absorbed.
Serve with grilled fish or chicken over rice.
