Clamshell Mushroom Stir-Fry

Ingredients:


  • 4 oz. Alba or Brown Clamshell mushrooms
  • 2 Tbsp. canola or other neutral oil
  • ¼ tsp. minced ginger
  • ½ tsp. minced garlic
  • 2 tsp. soy sauce
  • 1 tsp. mirin
  • 1 pinch ground black pepper
  • 1 pinch crushed red chili pepper (optional)


Directions:


  1. Separate mushrooms from the bunch by hand.
  2. Heat a large sauté pan (or wok) to medium-high heat.
  3. Add oil and allow to heat for a moment.
  4. Add mushrooms and toss to coat with oil, then stir every 30-60 seconds until mushrooms begin to brown (about 4-6 minutes).
  5. Add ginger and garlic then cook for 1-2 minutes until fragrant.
  6. Add ground black pepper, crushed red chili pepper (if using), soy sauce, and mirin and stir to combine; cook for another minute or so until liquid has absorbed.


Serve with grilled fish or chicken over rice.
