Grilled Nebrodini Bianco

Ingredients:


  • 8 oz. Nebrodini Bianco mushrooms, sliced ⅓-inch thick
  • 1 – 2 Tbsp. extra virgin olive oil
  • Zest of 1 lemon
  • Juice of half a lemon
  • 1 clove garlic, finely minced
  • 1 Tbsp. fresh parsley, chopped
  • 1 tsp. fresh oregano, chopped
  • ½ tsp. salt
  • ¼ tsp. ground black pepper
  • ¼ tsp. crushed red chili pepper (optional)


Directions:


  1. Preheat grill to medium heat.
  2. Combine all ingredients except mushrooms and mix well.
  3. Lay out sliced mushrooms on a plate and spoon dressing over them; allow to marinate for 5-15 minutes.
  4. Place slices on grill so that they are at least ½ inch apart and cook for about 4-5 minutes per side.
  5. Once golden brown and crispy on both sides, remove to a serving platter. Garnish with fresh herbs.
