Maitake Mushroom Croutons

Ingredients:


  • 8 oz. maitake mushroom, broken or chopped into bite sized pieces (about 1 inch square)
  • 4 - 6 Tbsp. olive oil
  • 1 Tbsp. Italian seasoning
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. paprika
  • 1 tsp. salt
  • ½ tsp. coarse ground black pepper


Directions:

  1. Preheat oven to 350°.
  2. Gently combine all ingredients in a bowl to coat well.
  3. Place on an aluminum -foil-lined sheet pan and spread evenly.
  4. Bake for about 30 minutes, stirring every 10 minutes or so, until golden brown and crispy.
  5. Allow to cool and store in the refrigerator in a sturdy container lined with paper towels to absorb extra oil.


Sprinkle on top of soup or salads, or just snack on them.
