Ingredients:
- 8 - 16 oz. maitake, whole head if possible
- 4 - 6 Tbsp. olive oil
- 1 - 1 ½ Tbsp. herbes de Provence or Italian seasoning
- 1 tsp. salt
- ½ tsp. ground black pepper
Directions:
- Preheat oven to 375°.
- Place maitake on a sheet pan lined with foil.
- Carefully drizzle olive oil evenly over the mushroom, ensuring it gets in between the fronds.
- Sprinkle seasonings over the top and in between fronds as evenly as possible.
- Roast on the center rack of oven for 25-30 minutes, or until edges are golden brown and center is tender.
Serve as a centerpiece or allow to cool and peel apart to sprinkle over a chicken dish or steak.
