Whole Roasted Maitake

Ingredients:


  • 8 - 16 oz. maitake, whole head if possible
  • 4 - 6 Tbsp. olive oil
  • 1 - 1 ½ Tbsp. herbes de Provence or Italian seasoning
  • 1 tsp. salt
  • ½ tsp. ground black pepper


Directions:


  1. Preheat oven to 375°.
  2. Place maitake on a sheet pan lined with foil.
  3. Carefully drizzle olive oil evenly over the mushroom, ensuring it gets in between the fronds.
  4. Sprinkle seasonings over the top and in between fronds as evenly as possible.
  5. Roast on the center rack of oven for 25-30 minutes, or until edges are golden brown and center is tender.


Serve as a centerpiece or allow to cool and peel apart to sprinkle over a chicken dish or steak.
